Tis the season! Pumpkin season! Whether you like pumpkin spice lattes, pumpkin spice donuts, pumpkin pie, even pumpkin Cheerios, well there's a pumpkin something for you! My personal favorite is pumpkin bread and I made my first of the season yesterday! I must admit, I have missed it! I'm a pretty seasonal person, and I generally do not make this any other time of the year, but now, I will be making a lot of it! It's such an easy recipe, too! Pumpkin Bread
1.5 cups all purpose flour
1/2 teaspoon salt
1 cup sugar
1 teaspoon baking soda
1 cup pumpkin puree
1/2 cup of butter (one stick melted) OR 1/2 cup of vegetable oil
2 eggs, beaten
1/4 cup of milk (I prefer whole milk)
1 teaspoon cinnamon
dash of nutmeg
dash of ginger
Heat oven to 350 degrees. Mix together the flour, salt, sugar, and baking soda. In a separate bowl mix pumpkin puree, butter (oil), eggs, milk, and spices. Mix thoroughly and then add to the dry ingredients. Pour into a well-greased baking dish or loaf pan (I prefer the mini loaf pans). Bake approximately 45 minutes or until toothpick comes out clean.
Additions:
1 cup of mini chocolate chips
1 cup golden raisins
